Ingredients

  • Canned Tuna (6 oz)
  • Cooked Lentils (1 cup)
  • Red Onion (1 count)
  • Cherry Tomatoes (8 oz)
  • Dijon Mustard (1 tbsp)

Instructions

  1. Drain the canned tuna and flake it into a large bowl
  2. Rinse and drain the cooked lentils, then add them to the bowl with the tuna
  3. Finely chop the red onion and add it to the bowl
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make a simple dressing
  5. Pour the dressing over the salad ingredients and gently toss to combine
  6. Taste and adjust seasoning if needed
  7. Serve immediately or chill before serving if desired
